Hi Robin; My name is Candi, I've been veggie for 12 years, and researched the whole concept prior to the transition. Way before the Internet, I read tons of nutrition books.
Later, I went to the Wild Rose College of Natural Healing and now hold 2 Nutrition certificates.
As a Fitness and Yoga Instructor who also has 2 large dogs to walk daily,
I too, need quality sources of energy to get me through!
In a nutshell:
Whole grains are the finest sources of carbohydrates for that energy you need. Try all the varieties there are, in side dishes, salads, desserts and snacks. 40% of your calories should come from Carbohydrates
The best sources of protein are low fat and high quality, and luckily for us, vegetarian: Beans, lentils, nuts and soy products are cheap and versatile. Protein helps build and repair muscle. Eat some with every meal to keep blood sugar stable. Aim to get 30% of your daily calories from Protein.
Fat is essential for many of the body's functions and systems; so don't eliminate it. Eat high quality and keep your intake to about 30% of daily total.
Check out vegweb.com or PETA.com for tons of info, tips and recipes.
Hope this was helpful, good luck!
Candi

Hi Robin,
a good source for support and credible information (including the best vegan recipes I've ever encountered) is Compassionate Cooks website and founder Colleen Patrick Goudreau. Her website is www.compassionatecooks.com. You'll also find some inspiring and educational podcasts that you can download (for free!). Listen to them when you are preparing your vegan meals. Good luck with your trasition.
